Veggie Burger Patty: Spiced Millet with Red Cabbage

An experimental recipe with veggie burger using pearl millet and warm Indian spices. Red cabbage is added for more colour and nutrients.


Millet is highly viscous and is a good material for veggie burger. I cooked it with red cabbage, carrot, and spices to make a delicious, non-greasy and high-fibre veggie burger – a delicious lunch with salad.

Whole Grain Pearl Millet High in Fibre

Compared to white rice, millet grain is lower in calories, fat, and higher in dietary fibre. When brown rice not come in handy, these whole grains are a great alternative to increase nutritional intake. There are so many such products in Germany – some are organic, even cheaper than imported Thai and Japanese rice.

The reference recipe used yogurt. I didn’t understand why it was added, so I omitted it and only used eggs to help binding. But the burger was too soft and could be easily loosen up with a fork. Next time I’ll try adding flour or bread crumbs.

Ingredients

Makes 4 pcs

For the golden millet

  • 100 g golden Millet
  • 300 g water
  • ¼ tsp salt

For Other Veggies and Seasonings

  • 1 tbsp oil
  • 100 g red cabbage, grated
  • 1 (80 g) carrot, grated
  • ½ small onion, finely diced
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 2 cloves
  • ½ tsp mustard seeds
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ¼ tsp salt
  • black pepper
  • 1 egg
  • 1 tbsp lemon juice
  • 20 g fresh parsley, chopped

How to Make Spiced Millet Cakes with Red Cabbage

  1. Cook pearl millets as per the packet instructions. (I used 3 times water + 1% salt, boiled for 9 mins then covered for 10 mins)
  2. Heat 1 tbsp oil in a pan over medium heat, fry the cloves and mustard seeds for a minute or so until fragrant. Then lower the heat and add the onions to cook until they are softened.
  3. Add the red cabbage and carrot to cook till softened, season with garam masala, turmeric, coriander and cumin powder, salt and black pepper.
  4. Fold in the cooked millet and parsley, freshly squeeze in some lemon juice. Have a taste and adjust. Then add the egg to mix well.
  5. Separate the mixture into 4 pieces and shape into burger patties.
  6. Heat some oil in a pan, fry the patties until both sides turned golden brown. Serve with roasted potatoes and green salad.
