I’m going to share with you my most beloved mackerel recipe. Easy-peasy, yet very tasty.

Back in Japan, I used to buy salted mackerel. Just place it in a fish broiler and it’ll be ready in a few minutes. It’s such a pleasure to enjoy the moist, oily, rich and distinctive flavour of a mackerel. And here in the UK, there is plenty of frozen mackerel and you can do the trick in a similar way.

Where to find mackerel in the UK?

Most of the major supermarkets sell mackerel in chilled or frozen. I usually buy frozen mackerel as I find it easy to store without sacrificing the taste. But to me, boneless mackerel fillets is a must, since I really don’t like picking small bones while eating. That’s why I find the frozen mackerel fillets in Iceland has great value – no bones, tasty and budget-friendly, with £3.34 for 350 g / 4 fillets (when you buy any 3 for £10). I also tried M&S frozen mackerel. Great taste but with a lot of small bones.

Grill in a Horizontal Toaster

A simple mackerel recipe - use toaster!

Since there is no integrated fish broiler in the UK, I definitely need this kind of horizontal toaster / 10 L mini oven to do the job or make open toast for breakfast. They are not easy to find in an electrical appliances store or department store, but you can buy it online like Amazon. Another good reason to grill mackerel in a horizontal toaster is it saves time and energy, compare to a traditional oven.

I’ve cooked mackerel many times in a toaster and no fishy smell left behind. So don’t worry and go give it a try!

About the Ginger and Wine

The ginger and wine are to help removing the fishy smell. I left the grated ginger on the fish as it doesn’t bother me. If you want to do it in a more Japanese way, you can place the ginger juice and wine (or Japanese cooking sake) in a bag to marinate, then rinse and pat dry again before grilling. Garnish and grated daikon/radish and shiso leafs.

Toaster Grilled Mackerel Recipe

Season with salt, drizzle some wine on it, sometimes I even skip the ginger. Pop it into oven for 10 minutes, done!

Ingredients

Serves 2

  • 2 fillets of frozen mackerel (thawed)
  • ½ thumb-sized ginger, grated
  • 2 tbsp white wine
  • ¼ tsp salt (to taste)
  • ¼ lime or lemon juice

How to Make

  1. Pat dry the mackerel. Rub the ginger on both sides of the mackerel .
  2. Sprinkle on salt and pour over the white wine, leave to marinate for 20-30 mins.
  3. Place the mackerel (together with the marinate) on a baking tray, and grill it in a horizontal toaster at 200ºC for about 10 mins, or until the skin is nicely grilled and fully cooked.
  4. Freshly squeeze in lime or lemon juice.
