A game changer, a not-so-Xiamen chow mei fun, and a wonderful wife.
Plan is Nothing, Planning is Everything.
Today, Curry Boy works from home. I was planning to make baked fish, grilled cauliflower steaks and buttered potatoes with preserved lemon.
Suddenly, at about 11:30a.m., he came to say, ‘Oh I’ll have a long meeting today, from noon till evening.’
What he meant was, he’ll have to have lunch at his desk, and it’s better for him to have a one plate lunch holding on hand and easy to eat. My meal plan is ruined.
But, as always, plan is nothing, planning is everything.
I knew the key point is : One plate lunch. So, no soupy dish, stew / curry is fine, fried rice or stir-fried noodles also can work.
After a little browsing across the web, I came up this chow mei fun recipe, and twisted it into the not-so-Xiamen chow mei fun. 😛
To make myself comfortable, I skipped all the ham and char siu, just kept the shrimps and eggs, with the veggies I like, easy-peasy, delicious and healthy.
What a wonderful wife.
Ingredients
Serves: 2
- 2 thin brown rice vermicelli, soaked in water for at least an hour, drained
- 2 medium size eggs, whisked and added pinch of salt
- 100 g frozen shrimps (approx. 12-13 pcs), try your best to thaw them in a short time
- ½ small red onion, thinly sliced
- 1 glove garlic, minced
- 1 scallion, chopped, green and white separate
- ½ orange colour paprika, julienned
- 1 big size mushroom, sliced
- 2 heida beans, chopped
- salt and pepper
Sauce
- ½ tbsp Shaoxing wine
- ¾ tbsp oyster sauce
- 1 tsp soy sauce
- ½ tsp sugar
How to Make The Not-So-Xiamen Chow Mei Fun
- Heat a little oil in a pan, scramble the eggs and set aside.
- In the same pan, cook the shrimps (add oil if needed) and add a pinch of salt for seasoning, also set aside.
- Meanwhile, heat another large pan with little oil, fry the garlic, scallion (white parts only) and onions until fragrant. Then add the vegetables and stir-fry until softened. A pinch of salt for seasoning is recommended.
- Now, add the drained vermicelli and stir-fry everything for 3-5 mins, until they are cooked through. Meanwhile, mix all the sauce ingredients in a small bowl.
- Add back the eggs and shrimps into the pan, pour in the sauce, stir-fry well, garnish with the green parts of scallion, serve hot.
