This salsa linguine uses chives, tomato, chilli and fresh orange juice, refreshing and mouth-watering. What a fantastic vegan pasta sauce!
Salsa with Pasta? It Works!
Salsa, which is often used in Mexican cuisine, is actually very easy to make. Chives, onions, diced peppers, tomatoes, lime juice and parsley, season with salt and pepper, done.
Salsa is usually used with Mexican dishes such as Nachos and Tacos. With pasta? It also works!
I learned this recipe from a cookbook called ‘Vegetarian and vegetable cooking’.
In 15 mins, done!
It’s super easy to make this pasta : Sauté the shallots, garlic and peppers, add tomatoes and orange juice to boil, add seasoning, then toss in the pasta. It can be cooked within 15 minutes!

- 80 g linguine
- 1 clove garlic, minced
- ¼ onion, diced
- 2 scallion, chopped
- ½ green chilli, deseeded and diced
- ⅓ canned tomato (130 g)
- juicy of ½ sweet orange
- salt and pepper to taste
- 2 tbsp olive oil
- parsley
How to Make Summer Orange Salsa Linguine in 15mins
- Cook the pasta in a pot of salted water according to the instructions.
- Heat some olive oil in a pan, fry the onions, garlic and chilli with low heat until the onions turn translucent. Add canned tomato and freshly squeeze in the orange juice. Season with a little salt and pepper and bring to a simmer.
- Use a tong to pick the pasta directly into the pan, so that some pasta cooking water is being transferred to the pan.
- Mix the pasta and sauce together quickly, have a taste, add some more salt if needed. Garnish with chopped parsley, enjoy!
