Easy and Classic: Tofu with Steamed Fish Soy Sauce (Vegan)

I often make this tofu dish once or twice a week — it’s healthy, easy to make and filled with homey flavour.


The sauce is learnt from The Woks of Life by adding sesame oil, water and more scallions to the soy sauce. Result? It tastes like the steamed fish soy sauce my mom used to make! Nothing complicated, just pour it on soft tofu. It’s a first-class enjoyment.

Recommended Silken Tofu

I’ve not yet tried all the silken tofu (soft tofu) on the UK market, but Clearspring’s one is by far the best — silken and creamy — just as it’s advertised. It tastes like the one in Japan I’ve always enjoyed. Or, to be precise, they are more or less the same.

In terms of ingredients and style, The Tofoo Co. Naked Tofu could be an alternative, but it’s yet to be tried.


Cantonese Steamed Fish Sauce on Tofu Recipe (Vegan)

I don’t even bother to steam the tofu. Just enjoy it chilled with warm scallion soy sauce.

Ingredients

  • 200 g silken tofu
  • white pepper

For the Sauce

  • 2 tbsp oil
  • 2 scallions
  • 1 shallot
  • 2 inch ginger
  • 2 tbsp soy sauce
  • 2 tbsp water
  • ¼ tsp sugar
  • pinch of salt
  • 1 tsp sesame oil

How To Make

  1. Cut the tofu into 1 cm thick pieces and place them on a plate, then sprinkle over some white pepper.
  2. Cut the scallions into rings, or shred them, as the shape doesn’t matter. And finely dice the shallot.
  3. Warm the oil in a pan over medium-low heat. Stir in the scallions, shallots and ginger. Cook until fragrant and it takes on some colour.
  4. Turn down to a low heat. Add soy sauce, sesame oil, water, salt and sugar. Stir and bring it to a simmer. Pour the sauce over the tofu and enjoy with hot steamed rice.

Silken Tofu with Scallion and Soy Sauce

Scallion soy sauce warm tofu.

Crudely chop up 1 scallion and 1 round shallot, then sauté until fragrant. Add 1 ½ tbsp soy sauce, ½ tsp sugar, 1 tbsp neutral oil and ½ tbsp of water, bring to a simmer and top it on the tofu.

There are many combinations of ingredients for chilled tofu. I use a handful of fresh coriander, 1 tsp grated ginger, 1 tbsp soy sauce and 1 tsp sesame oil for the sauce. It’s can be served in 5 minutes, delicious, simple and convenient!
