That’s how I pulled a healthy and quick couscous meal under 20 mins. Less oil, limited utensils to wash, tasty and fulfilling.
Couscous & Courgette: Easy to Prep, Quick to Cook
Let’s talk about couscous and courgette. They are always in my cupboard and fridge, plus some basic veggies, these ingredients can help you to pull a real quick meal with no fuss.
When I’m in hurry, couscous would be my second choice next to noodles/pasta. Either with salad, fish, grilled veg or simply some spices, couscous never disappoints me. As it can be done in 10 mins just by soaking in boiling water, it saves your energy (and the earth), meanwhile you can cook something else.
What about courgette? I like it’s easy to wash and can be kept fresh for a longer time. You just have to cut it into thicker pieces, then pan-sear, season with salt and pepper, like this one, simply juicy and delicious!
Ready Roasted Chicken to Save Time
As a so-called flexitarian, this kind of ready-made meat can save your time and boost the protein intake as well.
Today, while I was doing grocery shopping in M&S, my attention was caught by a heated deli shelf fulled of rotisserie chickens. A whole butter basted chicken costs £6.5. It looked freshly made and smelled good too! So I put one into my trolley. 🙂
Back home, it’s already 12:30pm. I was hungry. So I decided to pull a quick lunch by making couscous with courgette and chicken.
Ingredients
Serves: 1
- 70 g couscous
- ¼ tsp salted vegetable bouillon powder
- ½ courgette, diced
- ⅛ roasted chicken
- 2 mushroom, sliced
- ½ onion, diced
- 1 clove garlic, minced
- ½ tsp curry powder
- 1 handful parsley, chopped
- lemon juice
- salt & pepper
How to Make Speedy Couscous with Courgette and Chicken
- Mix couscous with vegetable stock powder, soak with boiling water for 10mins.
- Heat little oil in a pan, pan-fry onion, garlic until fragrant, then add mushroom and courgette, season with a pinch of salt & pepper.
- Use a kitchen scissor to cut some roasted chicken, directly add into the pan, stir-fry well until hot enough.
- Add soaked couscous, curry powder and parsley, everything mix well, at last squeeze in some lemon juice and serve.
Some Thoughts about Roasted Chicken
Nowadays, people like to label themselves to a certain group of diet.
“I’m a Vegan.”
“I’m Vegetarian.”
“I’m a Pescatarian.”
……
And I? I have no label. Curry Boy and I are veg lovers, eat loads of veg and fruits, plus small amount of seafood, meat and dairy products. As we were all taught in school : ‘Try to eat everything with more different colours, but less fat, salt and sugar.’ I think unless you have medical or religious reasons, don’t try to avoid certain food, just because it’s trendy.
We still eat meat, but not handling raw meat at home. I don’t want to touch raw meat, don’t let it touch the chopping board either, to avoid food contamination and out of ethical reasons.
A roasted chicken, like the M&S one, can comes in very handy. I like it’s simple and well-seasoned, less fat, and tasty. I can simply use a kitchen scissor to cut some to stir-fry vegetables, pair with baked vegetables, or like this time, mix it with couscous. It’s a good source of protein too! So, why not?
