This potato pancake (okonomiyaki) is a nostalgic Japanese soul food, a homemade version without mayonnaise. Dip with ketchup and enjoy it with rice!


I used a budget-friendly box grater (bought from IKEA), to grate potatoes and cabbage with the coarser side.

Then mix it with flour, egg, chess and seasonings. After shallow-frying, the outside turned nicely golden brown, with soft and fluffy inside. It was like eating a Japanese okonomiyaki.

Variations

Try Hand-cutting Potatoes

I tried hand-cutting the potatoes, surely more effort and skill were required, but the firmer texture offered a different pleasure.

Try with Spinach

Besides cabbage, spinach is also a good fit with potato. I paired it with a Dijon Mustard Honey Yogurt Sauce.


Cheesy Potato Pancake (Okonomiyaki) Recipe

Have a little patience while grating the vegetables. Then, mix all in one bowl and fry! Easy peasy.

Japanese savoury pancake (okonomiyaki).

Ingredients

Serves 2 to 3

  • 2 (200 g) potatoes
  • 50 g cabbage
  • 50 g grated or shredded cheese of your choice
  • 1 egg
  • 2 tbsp plain flour
  • 2 tbsp tapioca/potato starch/cornflour
  • ¼ tsp salt
  • a pinch of white pepper
  • 2 tbsp of oil 

How to Make

  1. Peel the potatoes, then grate with the coarser side of a box grater. Repeat with cabbage.
  2. Mix the flour, starch, salt and pepper in a large mixing bowl. Tip in the potatoes, cabbage, cheese and egg, Give everything a nice stir.
  3. Warm the oil in a pan over medium-high heat, pour in the batter and swirl the pan to evenly distribute the batter.
  4. When the edge starts to brown, lower the heat to medium, flip to the other side and continue cooking.
  5. Once both sides are nicely coloured, then it’s ready to eat! Serve with ketchup or/and mayonnaise.
