Simple Cheesy Cabbage and Potato Pancake

Yes I know, it’s savoury pancake again. But please allow me, this potato pancake is very simple to make and delicious!

After shallow-frying, potatoes are little burnt while the cheese inside are soft. Just dip with ketchup or other sauce you like, I’ve got an enjoying-junk-food feeling but not guilty!

If you like this kind of potato pancake, I’m sure you’ll like Japanese Okonomiyaki, too!

Here are a few savoury pancakes I cook often when I want one more easy side dish.

Cheesy potato pancake.

Ingredients

Serves 2-3

  • 2 potato (approx. 200 g)
  • 50 g cabbage
  • carrot (optional)
  • 50 g Pizza cheese
  • 1 egg
  • 2 tbsp plain flour
  • 2 tbsp tapioca/potato starch or other starch
  • ⅓ tsp salt
  • white pepper
  • oil
  • ketchup (to dip)

How to Make Cheesy Cabbage and Potato Pancake

  1. Finely shred the vegetables using a box grater, peeler or mandoline.
  2. Mix everything together(except oil and ketchup) in a bowl.
  3. Heat 2 tbsp of oil in a large pan, scoop a spoonful of batter to fry, and repeat until use up all the batter.
  4. Fry both sides to golden brown. Serve with ketchup.
