A simple and healthy stir-fry noodles recipe which provides you protein and loads of nutrients. Definitely perfect for a midweek meal.


Shacha sauce, confusingly, also called Chinese BBQ sauce, which actually has nothing tastes like the American or the UK style! It usually contains fish and dried shrimp, so it can be fishy to some people. To Asian, it’s kinda comforting since we grown up surrounded by fermented stuff!

My Mom often used shacha sauce to marinate meat. But don’t limit to that as it goes pretty well with stir-frying noodles with shrimp (and veg)! It boosts the umami thanks to the dried shrimp content.

In the UK, the most popular shacha sauce brand is Bullhead, if it helps. You can find it in the oriental grocery stores.

I also added sesame on the stir-fried noodles. It’s my little trick to absorb more nutrients, making the dish looks more appealing without dominant the flavour.

Stir-fried Glass Noodles with Shrimp and Veggies Recipe

Ingredients

Serves 2

  • 5 frozen shrimps, thawed
  • ½ carrot, cut into batons
  • small handful of frozen beans
  • 2-3 dried shiitake, soaked and sliced, save the liquid
  • 1-2 scallion, chopped, separate white and green parts
  • 1 pack of glass noodle, soaked until softened
  • 1 clove garlic, minced
  • 1 tsp ginger, minced
  • ¼ tsp salt
  • ¼ tsp white pepper

For the Seasoning Sauce

  • 1 tsp shacha sauce
  • 1 tsp oyster sauce
  • 1 tsp soy sauce
  • ½ tsp sugar
  • 1 tsp sesame oil

For the Garnish

  • fresh coriander leaves
  • sesame

How to Make

  1. Heat about 1 tbsp of oil in a pan, fry the ginger, garlic and scallion(white parts) until fragrant.
  2. Stir in the frozen beans, carrots, shiitakes and shrimps. Cook until the shrimps change colour.
  3. Splash in 2-3 tbsp of shiitake soaking water and add salt and pepper to season. Stir-fry for a further minute, then take off from the heat and set aside.
  4. Use the same pan, now add the drained glass noodles and all the seasoning sauce ingredients. Add a little bit more shiitake water if needed.
  5. Return the cooked veggies and shrimps to the pan together with the scallion(green parts). Give everything a final stir-fry. Garnish with sesame and coriander.
