Easy and Quick: Sauté Courgette with Rice Vinegar

Courgette is a must buy vegetable while they are in season. It’s easy to wash and prep, and has a relatively longer shelf life. Simply sauté it with salt, pepper and vinegar. It’s juicy and delicious!


In our family, 2 dishes are never enough for dinner (although we’re only 2 people). I always want an extra dish to fulfil my greedy appetite. In this case, courgette comes in handy. I’d sauté it until nicely brown, then sprinkle over some rice vinegar for a mellow sour aroma. This simple side dish can be prepared in 10 minutes.

Sauté Courgette with Rice Vinegar Recipe

A bit of acidity from the vinegar brighten up the whole courgette dish. If you don’t have rice vinegar, other vinegar will work too!

Ingredients

Serves 2

  • ½ courgette
  • 2 tsp rice vinegar
  • salt and pepper
  • 1 tsp oil

How to Make

  1. Cut the courgette into 1 cm thick.
  2. Warm a tsp of oil in a pan over medium-high heat, sauté the courgette with a pinch of salt and pepper, until they turn golden brown.
  3. Flip to the other side, let cook until you got the lovely colour. Sprinkle over the rice vinegar, swirl the pan a bit and serve hot.
