Quickly pan-seared a salmon, then simply a lemon garlic butter sauce. Pair it with roasted veggies and crusty bread for a protein-packed and delightful lunch.

A Simple Sauce with Salmon

Today I was in a mood for fish. So I thawed 2 pieces of salmon fillets, and made a wonderful sauce that was adopted from cookingclassy.

I like this sauce because the ingredients were simple and easy to make – Sauté garlic, add chicken broth, lemon and honey, bring to a simmer, add butter and parsley, done!

Don’t Forget to Roast some Vegetables

To follow my lazily-healthy cooking motto, I roasted some vegetables as well.

Toss the potatoes, big mushrooms and frozen broccoli with olive oil, garlic powder and salt and pepper. Roasted in a 200ºC oven for 30 mins or so. In the last 2-3 minutes, throw the bread inside also. Viola! Tasty lunch with the least effort!


Ingredients

Serves 2

  • 2 salmon fillet (150 g each)
  • 1 tbsp oil
  • ½ lemon
  • 2 cloves garlic, minced
  • 80 g salted chicken broth
  • ½ tsp honey
  • 5 g butter
  • salt & black pepper
  • fresh parsley leaves, chopped

How to Make Salmon with Lemon Garlic Butter Sauce

  1. Pat dry the salmon and add salt and pepper to both sides. Heat oil in a pan, add the salmon and pan-sear for 1 ½ min. Turn to other side, cook for another 1 ½ min until they are just done. Move them to a low-temperature oven to keep warm.
  2. Use the same pan, fry the garlic with the remaining oil until fragrant.
  3. Pour over chicken broth, add 2 slices of lemon and honey, stir well and bring to a boil.
  4. Add butter and half of the parsley to the pan, cook until the sauce has been reduced to your preference. Then pour over to the salmon. Garnish with the remaining parsley and squeeze in fresh lemon juice, to serve.
