I like to think peperoncino as a spicy chow mein as both cooking methods alike, consuming very less brain’s energy. Very tasty, healthy and quick to make.
How simple is the recipe? It’s pretty straight forward that you can’t go wrong in any step.
First, half-thaw the salmon by soak it (with bag) in water for 20 minutes, if you forget to thaw it overnight in the fridge. Then sauté the onions, garlic and chilli until fragrant, cook the salmon in the same pan, add tomatoes and mushrooms to cook for a while. Finally, stir in the pasta, season and serve.
Salmon is great but tuna will work too! A tinned one is absolutely fine.
The tomatoes do help as a sauce and mushrooms give an extra kick of umami, so don’t skim on them.
Salmon and Tomato Peperoncino Recipe
If you know how to make chow mein (Chinese stir-fry noodles), you’ll be able to cook this peperoncino, too. Just make sure it’s garlicky (and spicy) enough!
Ingredients

- 160 g spaghetti
- 2 frozen salmon filets, thawed
- 100 g cherry tomatoes, halved
- 3 mushrooms, sliced
- 1-2 dried chilli, deseeded
- ½ onion, sliced
- 4-5 cloves garlic, sliced
- basil
- salt and pepper
- olive oil
How to Make
- Heat 2 tbsp of olive oil in a pan over medium-low heat, stir in the onions to slowly cook until they are softened. Add the garlic and chilli to fry till the garlic are pale golden and very fragrant.
- Make some space in the pan and place in the salmon with a pinch of salt, pepper. Cook until it’s half-cooked through.
- Then use a spatula or fork to loosen up the salmon flesh, then mix well with the aromatics.
- Meanwhile, bring a pot of salted water to boil and cook the pasta. Reserve a ladleful of pasta cooking water.
- Add the mushrooms and tomatoes to the pan, gently cook until the mushrooms soften and the tomatoes collapse. Press the tomato to let its jelly mingles with the sauce.
- Add some pasta cooking water till the ingredients are half covered. Simmer for 5 minutes.
- Return the pasta to the pan and give everything a nice stir. Add a little more olive oil, sprinkle some freshly ground black pepper and garnish with basil before serving.
