I like red cabbage, but I don’t like eating it raw. So I baked it! Those thin leaves crisped up, and the thick one tendered. It’s even better when pair with a versatile mustard honey sauce.
And for the recipe, strictly speaking, there’s no recipe at all. Simply use any salad leaves and dried fruits or nuts you like. I think it’s a great way to eat red cabbage just next to the German salad way!
Roasted Red Cabbage with Mustard Honey Sauce Recipe
It’s a good way to turn leftover red cabbage into a delicious and healthy salad without fuss.
Ingredients
Serves 2
- red cabbage, cut into half-moon
- salad leaves
- walnuts
- raisins
- salt and pepper
- olive oil
For the sauce
- 3 tbsp olive oil
- 1 tbsp wholegrain mustard
- ½ tbsp honey
- ½ tbsp Italian balsamic vinegar
- ½ tsp soy sauce
How to Make
- Place the red cabbages on a baking tray, drizzle over olive oil, salt and pepper. Bake in a 180ºC oven for 20-30 mins until nicely charred. Meanwhile, mix all the sauce ingredients together.
- Put some salad leaves on a plate, then red cabbages atop of it. Scatter the raisins and walnuts, pour over the sauce. Enjoy!
