This is the best roasted potatoes I’ve ever had. Pair with preserved lemon is simply a genius way to make me eat more potatoes.

Few months back I saw a roasted potatoes with preserved lemon recipe online, from Martha Stewart. I imagined how tasty it could be since I love both potato and lemon! After a few days, I made my own very first preserved lemon. It was very easy, basically you just rub the lemon with salt, squeeze out the lemon juice which can cover the lemon itself, then you let it set for a month. Viola! preserved lemon is done!

Do you know the Japanese call preserved lemon ‘the magic condiment‘? Of course it’s just a way to promote the product, but I do agree preserved lemon matches well with any meat or roast veggies.

Today, I chopped a quarter of preserved lemon(remember to rinse it first), and paired it with roasted potatoes. No bitterness on the rind, only the intense lemon flavour, it’s heaven. I can eat it all day!

Ingredients

Serves 2 as a side

  • 250 g potato, cut into 2 ½ cm cubes
  • ¼ piece of preserved lemon, rinsed & chopped
  • ½ small red onion, finely sliced
  • 1 clove garlic, minced
  • ½ fresh mild chilli, deseeded and chopped
  • mint leaves, finely chopped
  • parsley, finely chopped
  • salt & pepper to taste
  • olive oil

How to Make Roasted Potatoes with Preserved Lemon

  1. Boil the potatoes until just tender when pierced with a fork, around 5 mins. Drain and pat dry.
  2. Pour some olive oil over the potatoes, season with salt and pepper. Roast the potatoes in a 210ºC oven for 30mins or until golden brown.
  3. Add garlic, onion, fresh chilli and ¾ of the preserved lemon to the roasted potatoes. Again roast for a further 5 minutes or so.
  4. Meanwhile, mix the mints and parsley with a splash of olive oil. Add some pepper and the remaining preserved lemon into it. Mix well with the roasted potatoes before serving.
