This lentil soup is a delightful surprise that I came across by chance. By simply sautéing the lentils and potatoes, it turned out so delicious that I could enjoy it every day. It’s easy to make and can be ready in just 30 minutes.
My original plan was mashed the lentils and potatoes as a sandwich filling. I started by sautéing the onions, lentils and potatoes, then simmered in water for 15 minutes. Had a sip, it’s so good that I immediately shared this delicious bowl of lentil soup with Curry Boy! The nutrients of lentils and potatoes are all in the soup, so don’t waste a single drop!
Ingredients
- 50 g red lentils (or any kind of lentil)
- 2 (100 g) small potatoes, diced
- ¼ small onion, finely diced
- ¼ tsp salt
- white pepper
- 800 ml water
How To Make
- Warm a little oil in a pot over medium-low heat, sauté the onion until translucent. Add the lentils and potatoes to cook a minute, season with salt and pepper.
- Pour in water and turn to low heat, boil for 15 minutes or until the veg are tender. Have a taste and adjust as necessary. Filter out all the vegetables and you’ll have a tasty broth!
