Vegetarian Thai Pad Krapow with Soya Chunks

I used soya chunks instead of pork, and added more veggies to make this vegetarian-friendly version of Thai Pad Krapow rice.


Pad Krapow (or Kaprao), or spelled as Phat kaphrao is a traditional Thai home food. In Japan, it’s called ガパオライス(gapao rice) which was very popular, just like Pad Thai. Pad Krapow can be served as a single dish. Otherwise, it was usually served with rice, with a lovely sunny side-up on top.

Since the authentic Pad krapow is too spicy for me, I like this vegetarian version more.

The original Thai Pad Krapow is quite chilli-hot. I wanted to lower the heat and make it vegetarian-freiendly, that’s why I used mapo sauce instead of chilli, and replaced pork with soya chunks.

Besides, I found this flavourful dish barely has any veggies in it, so I added onions, red peppers and sweet corn to boost the nutrient profile. You can also add any veggies you like, despite what the ‘tradition’ or ‘authenticity’ told you.


Ingredients

Serves 2

  • 80 g soya chunks
  • 2 eggs
  • 1 clove garlic, minced
  • 1 heaped tsp mapo sauce
  • a handful of basil
  • the veggies you like
    • ½ onion, finely sliced
    • ¼ red peppers, sliced into strips
    • ¼ canned sweet corn
  • 2 tbsp oil
  • salt & pepper to taste
  • hot rice to serve

For the Sauce

  • 3 tsp fish sauce
  • 2 tsp soy sauce
  • 2 tsp oyster sauce
  • 1 tsp sugar
  • 1 tbsp cooking wine

How to Make Vegetarian Thai Pad Krapow with Soya Chunks

  1. Soak the soya chunks in hot water in advance. Then drain and blitz into minced-like. Combine all the sauce ingredients in a small bowl.
  2. Heat the oil in a frying pan and fry the eggs. Season with pinch of salt and pepper, set them aside. In the same pan, add mapo sauce and garlic, stir-fry until fragrant.
  3. Stir in the soya chunks, onions and red pepper strips, add a little salt and pepper, stir-fry well until the veggies is cooked.
  4. Pour over the sauce and stir-fry for a further minute. Scatter in the basil as well.
  5. Place the hot rice on a plate, then top up with these pad krapow and fried egg. Enjoy!
