I recently discovered that the mixed vegetable fried glass noodles I’ve been making are known as Japchae in Korea. This dish is incredibly easy to prepare: simply sauté onions and garlic, add your favorite mixed vegetables, and season with soy sauce, oyster sauce, pepper, and other seasonings. It’s both satisfying and bursting with flavor.

Interestingly, ‘Japchae‘ originally means ‘mixed vegetables’ and didn’t include glass noodles. Over time, glass noodles became the star of the dish. Traditional Korean Japchae often includes beef or pork, but I opted for a variety of vegetables. Despite its size, Curry Boy and I devoured it quickly!

Ingredients

Serves 2-3

  • 1 small carrot, cut into batons
  • 4 mushrooms, sliced
  • ½ bowl of frozen beans
  • 1 glass noodles, soak to softened and drained
  • 1 clove garlic, minced
  • 1 tsp ginger, minced
  • pinch of salt
  • 1 tsp toasted sesame seeds

For the Sauce

  • 2 tsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp Shaoxing wine
  • pinch of sugar
  • pinch of white pepper
  • ½ tsp sesame oil

How to Make Korean Stir-fried Glass Noodles (Japchae)

  1. Warm some oil in a pan over medium heat, sauté the ginger and garlic until fragrant, then add the vegetables to stir fry and a pinch of salt to season.
  2. When the vegetables are softened, stir in the glass noodles and all the sauce seasonings. Stir fry well and cover with a lid until everything is cooked.
  3. Have a taste and adjust as necessary. Sprinkle over the sesame seeds before serving.
