Japanese developed a lot of easy-and-quick home cooking recipes due to their busy lives. Most of them are budget-friendly too! Among those, I especially like this stir-fry bean sprouts recipe since it tastes pretty good and very easy to make.
Few Twists to this Bean Sprouts Recipe
This is the Japanese recipe I am based on. Pretty simple and straight forward, that’s why I like it. After a few tries, I made a few adjustments to suit our taste, such as:
- Use fresh garlic instead of store-bought processed minced garlic, because it is not necessary.
- Add crab sticks for a more appealing presentation and flavour.
- Drizzle sesame oil before serving, not using it to fry the bean sprouts, because sesame oil is not suitable for high heat frying.
Cook Bean Sprouts Thoroughly
Because bean sprouts are grown in warm and humid conditions, there can be a risk of bacterial contamination, particularly with Salmonella or E. coli. So, every time I make sure the bean sprouts are fresh and properly stored. And most importantly, cook them thoroughly before consumption.
A Small Note Before You Cook
Don’t cook the eggs separately!
I tried once cooking the eggs like an omelette and scattered them over the bean sprouts, yet the result was less tasty. Simply because the eggs didn’t coat the bean sprouts, thus overall the flavour was a bit off. Pour the eggs over the bean sprouts!
Now, let’s dive in to the recipe.
Ingredients
Serves: 2
- 150 g washed bean sprouts
- 2 eggs, whisked
- 5 crab sticks (surimi)
- 1 clove garlic, minced
- 2 tsp sesame oil
- ¼ tsp salted vegetable bouillon powder
- pinch of salt
- white pepper
- 2 tsp toasted sesame
- green parts of scallion (for garnish, optional)
How to Make Stir-fry Bean Sprouts with Eggs
- Shred the crab sticks and set aside. Then dissolve the bouillon powder with a little water, add to the whisked eggs and mix well.
- Heat a little oil in a pan at medium-high heat. Fry the garlic until fragrant. Then add the bean sprouts and crab sticks, stir-fry for 2 minutes and season with a pinch of salt and white pepper.
- Pour in the eggs and add the sesame oil. Everything stir-fry well for a further minute. Garnish with the scallion and toasted sesame. Serve hot.
