Couscous is easy to cook and tasty. Just add some onion, garlic, coriander and lime juice, simple enough. Serve it with grilled fish, stewed meat, vegetable salad and much more.
Couscous is NOT Rice
Couscous’ colour and shape are very similar to millet, but it’s not rice. It’s made of durum wheat flour, make no mistake!
A Nutritious Meal: Couscous with Grilled Fish
In order to cook a weekday lunch quickly, I always keep a jar of couscous at home. For example, I would buy some seasoned frozen fish fillets (only with natural herbs/spices, not the heavily marinated ones) and cook them in the oven when needed. Then cook the couscous in 15 minutes – using only one pan with less oil. (Less utensils to wash too!)
If you think the portion is too small, you can also mash some cooked vegetables with stock in a blender to make a vegetable soup, which will make your lunch more filling and nutritious.

- 130 g couscous
- ½ small onion, diced
- 1 clove minced garlic
- ½ tsp turmeric
- 200 ml water
- a handful of fresh coriander, chopped
- ½ lime
- salt and pepper to taste
- vegetable oil
How to Make Happy Yellow Couscous in 15 mins
- Heat a little oil in a pan, sauté the onions and garlic until fragrant. Add turmeric, couscous and 1 ½ times of water.
- Season it with a pinch of salt and pepper. Stir well and cover with a lid. Turn to low heat and cook for 5 mins.
- Loosen up the couscous and freshly squeeze in some lime juice. Garnish with coriander, enjoy!
