10-min Easy Garlicky Enoki Mushroom Recipe

Want something real quick and that goes well with rice? Try this garlicky enoki mushroom recipe. With a simple Chinese sauce, you can get this done in 10 minutes.

Time Saver : A Simple Chinese Sauce

One of the reasons I love this dish is : the sauce is super easy to make.

You just have to fry the garlic and chilli, then mix with soy sauce, oyster sauce, ShaoXing wine and sugar. Cook this sauce together with enoki, as enoki will release enough water, so you’ll have a juicy, garlicky and typical Chinese sauce.

Swap Scallion with Chives

If you don’t like or don’t have scallion, you can swap them with chives, just like the recipe I adopted from thewoksoflife. But in Europe, Chinese chives are not easy to find, so I replaced them with scallions, which also created a great result!

See You Tomorrow? Cut it!

One thing to keep in mind is : Enoki is difficult to digest. Hence, it has another name called ‘See You Tomorrow’. It’s a little gross to say it in a food post, but it’s true! So you may want to cut it into smaller pieces to cope with the digestion problem. And also, remember to chew more!

Ingredients

Serves 2

  • 200 g enoki mushroom, roots cut
  • 2 scallion (green part) , chopped
  • 4 cloves garlic, minced
  • 1 dried red chilli, deseeded
  • 1 ½ tbsp oil

For the Sauce

  • ½ tbsp soy sauce
  • ½ tbsp oyster sauce
  • ½ tbsp ShaoXing wine
  • a pinch of sugar

How to Make Garlicky Enoki Mushroom

  1. Heat the oil in a pan, fry the garlic and chilli until fragrant at low heat. Remove them to a bowl, add all the sauce ingredients and mix well.
  2. Use the same pan, place half of the enoki, then place the scallion, on top place again the remaining enoki. Pour over the sauce, put the lid on and bring it to a simmer(about 5 mins).
