Our classic and homey Chinese stir-fried noodles can be ready in 20 minutes (including prep work). And it’s totally fine to skip dark soy sauce!
This is my most often make stir-fried noodles, or you can call it chow mein. When I don’t know what to cook for a quick lunch, I go for it.
It’s super simple to make! You just need to buy some noodles which is suitable for stir-fry, boil it, and at the same time chop some veggies and ginger, scallion. Stir-fry them all and add some soy sauce, sesame oil etc. for seasoning.
Dark Soy Sauce is NOT a must
Many stir-fry noodle recipes call for dark soy sauce. If you have it, you can use. if you don’t have (like me), it’s totally fine. Basically, dark soy sauce’s role in this noodle is to add some dark colour to be more appealing. I often omit it.. If you want it to be vegetarian or vegan, just use soy sauce then. It will be still very Chinese flavour I believe.
Ingredients

- 1 portion noodles
- 2 scallion, thinly sliced
- ½ round shallot, chopped
- ¼ thumb-sized ginger, minced
- a few rings of fresh red chilli, deseeded
- ½ carrots, sliced
- 50 g cabbages, shredded
- ½ tbsp soy sauce
- 1 tsp fish sauce
- salt & pepper
- a pinch sugar
- ShaoXing wine
- 1 tsp sesame oil
How to Make Everyday Stir-fried Noodles with Vegetables in 20 mins
- Heat some oil in a pan, stir-fry ginger, scallion, shallot and red chilli over medium low heat until fragrant.
- Meanwhile, cook the noodles according to the package instructions.
- Add cabbage and carrot to the pan, season with a pinch of salt and pepper.
- Now, add the cooked noodles and loosen up. Pour over the soy sauce, fish sauce, sesame oil, a splash of ShaoXing wine and a pinch of sugar. Stir-fry all well and serve hot.
