Simple ingredients and seasoning are always the best. Humble peas can be easily transformed into an easy made side dish which everyone loves. Like this one!


I always love a recipe which requires humble ingredients and cooks in one pan, yet, outshines many fancy-looking dishes. This is one of them – learned from a cookbook called MEZCLA, whose author is the co-writer of Ottolenghi Flavour.

Sweet Peas with Caramelised Onion and Tomato Recipe

Brown the onions, cook everything together in one pan – no muss, no fuss. It’s a saucy side dish to eat perfectly with bread.

Ingredients

Serves 2 as a side

  • ½ onion, finely diced
  • 100 g ripe cherry tomatoes, halved
  • 150 frozen peas, thawed
  • 4 tbsp olive oil
  • 2 fat cloves of garlic, crushed
  • 80 g vegetable stock
  • 1 tsp tomato purée
  • ¾ tsp salt
  • 10 g fresh basil leaves
  • 1 tbsp lemon juice
  • crusty bread to serve

How to Make

  1. First, heat 2 tbsp of olive oil in a pan and gently cook the onions with ¼ tsp of salt, until they are softened and golden. Stirring often. It takes about 10 minutes.
  2. Add 2 tbsp more oil to the pan, and throw in all the tomatoes, garlic, tomato purée, ½ tsp of salt and ⅔ of the basil. Cook for a couple of minutes until the tomatoes are softened.
  3. Stir in the peas and stock, bring to a simmer and cook for 6 minutes. The liquid should have been reduced a bit but still saucy.
  4. Freshly squeeze in the lemon juice and add the remaining basil. Serve with crusty bread to mop up all the sauce!
