Simply make carrot fritters by mixing grated carrot with halloumi and coriander powder. It’s an easy-peasy main dish even for a weekday lunch.

I got this recipe from a cookbook called ‘Vegetarian‘ (author: Alice Hart). I used to make fritter with potatoes(mix with cabbage), while this time I tried to use carrots instead. Taste sweeter, low carbs, feel like more healthy.

Since these carrot fritters are the main of my lunch, I also added halloumi cheese to increase the volume and nutrient profile.

What is Halloumi?

Halloumi is a semi-hard cheese made from goat and sheep’s milk(sometimes mix with cow’s milk). It origins from Cyprus, you can find it in many Middle East and Greek cuisine. Halloumi has a high melting point, so even you grill it with hight heat, it won’t melt! So it makes itself a good substitution of meat, you can grill it like a steak. And halloumi is also protein-packed. Like the one I bought, there is 21 g protein per 100 g.

One thing I find Halloumi quite interesting is….the texture! Literally it squeaks when you chew. It is not something I’m familiar with, and it is quite salty. Anyway, at least try once, maybe you will like it.

For the dipping sauce, I made a simple yogurt mustard honey sauce, by mixing plain yogurt, honey, french mustard (and some herbs if you like) together.

Ingredients

Makes 6 carrot fritters

  • 250 g carrot 250 g(about 3 pcs)
  • 225 g halloumi cheese
  • 2 scallion, sliced
  • parsley, chopped
  • 2 eggs
  • 40 g gram flour
  • 2 tsp coriander powder
  • ¼ tsp salt
  • black pepper

How to Make Carrot Fritters with Grilled Halloumi Cheese

  1. Carrot peeled and grated coarsely. Also grate 1/5 of halloumi cheese and add to the carrots. Cut the remaining cheese into thick pieces and set aside.
  2. All the ingredients mix together in a mixing bowl. Use 2 spoons to form the mixture into a pancake shape. Put them into the fridge for 30mins if you have time, to help setting the shape.
  3. Heat a generous amount of oil in a large frying pan, place in the formed mixtures and pan-fry until both sides turn golden.
  4. After that, also grill the halloumi cheese(without oil also ok) until golden, serve hot.
