Another 15-minute dish. Sauté the garlic, scallion and chillies until fragrant, then add cabbage, noodles and seasonings. I like the eggs added extra flavour to the dish!
It was the first time I stir-fried veggies with so many chillies. As long as the chillies are not broken, even if I used 3, it was only slightly spicy that luckily I could manage. I’m not a hothead but I find this one delicious. Just be careful not to break the chillies when stir-frying, otherwise it will be very spicy!

Spicy Glass Noodles with Cabbage Recipe
Escape from boring stir-fried cabbage to a tempting spicy cabbage with eggs and glass noodles. Goes really well with rice.
Ingredients
Serves 2-3
- 2 eggs, whisked with below seasonings
- salt, pepper, sesame oil, Shaoxing wine, a little each
- 300 g cabbage, shredded
- 1 glass noodle, soaked until softened, cut into shorter length
- 1 scallion, chopped
- 2 cloves garlic, minced
- 3 dried chillies
For the Seasonings
- ¼ tsp salt
- a pinch of white pepper
- 1 tbsp Shaoxing wine
- ½ tsp soy sauce
- ½ tsp sugar
- 1 tsp sesame oil
How to Make
- Heat some oil in a pan, fry the egg over medium-low heat until it just cooked, set aside.
- In the same pan, sauté the garlic, scallion and chillies until fragrant. Add the cabbage and stir-fry until wilted, then stir in the drained glass noodles and the seasonings listed above.
- At last, return back the egg to the pan and give everything a nice stir-fry. Enjoy with hot steamed rice.
