Sweet and Sour Aubergine (Japanese Recipe)

Back in Japan, I always cooked this dish as the sweet and sour sauce is so simple to make. And QUICK! All veg, no meat. Healthy and goes well with rice.


I especially like the sweet and sour sauce, which requires only 3 ingredients: soy sauce, rice vinegar and sugar. Basically, you cook through the veggies, and add the sauce, done.

Sweet and Sour Aubergine Recipe

Chop everything, sauté with garlic, mix the sauce and cook. It can be done in 15 minutes!

Ingredients

Serves 2

  • ½ aubergine, chunked
  • ½ red pepper, chunked
  • ½ yellow pepper, chunked
  • 1 clove garlic, minced
  • 2 tbsp oil
  • slurry ( ½ tbsp cornflour + ½ tbsp water)
  • parsley for garnish, chopped

For the Sauce

  • 1 ½ tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp rice vinegar
  • ½ tsp sesame oil

How to Make

  1. Warm the oil in a pan over medium-low heat, fry the garlic until fragrant. Meanwhile, put all the sauce ingredient in a small bowl and mix well.
  2. Add the aubergine and peppers to the pan and sauté for a while. Then put a lid on, slowly cook to coax out the sweetness and cooked through. It’s okay to take on some colour.
  3. Pour in the sauce and stir well. Cook until the sauce is reduced a bit.
  4. Add the slurry at last to thicken the sauce. Garnish with parsley and serve.
