Courgette is a must buy vegetable while they are in season. It’s easy to wash and prep, and has a relatively longer shelf life. Simply sauté it with salt, pepper and vinegar. It’s juicy and delicious!
In our family, 2 dishes are never enough for dinner (although we’re only 2 people). I always want an extra dish to fulfil my greedy appetite. In this case, courgette comes in handy. I’d sauté it until nicely brown, then sprinkle over some rice vinegar for a mellow sour aroma. This simple side dish can be prepared in 10 minutes.
Sauté Courgette with Rice Vinegar Recipe
A bit of acidity from the vinegar brighten up the whole courgette dish. If you don’t have rice vinegar, other vinegar will work too!
Ingredients
Serves 2
- ½ courgette
- 2 tsp rice vinegar
- salt and pepper
- 1 tsp oil
How to Make
- Cut the courgette into 1 cm thick.
- Warm a tsp of oil in a pan over medium-high heat, sauté the courgette with a pinch of salt and pepper, until they turn golden brown.
- Flip to the other side, let cook until you got the lovely colour. Sprinkle over the rice vinegar, swirl the pan a bit and serve hot.
