To be honest, this bread, requires a lot of steps, time and effort. But after you’ve tried and looked at the output, it’s not a simple bread, it’s an ART. And this was my first time! The feeling of achievement was so great!

Ingredients
Makes: 1斤 (600 g)
For the dough
- 270 g bread flour
- 2 tbsp sugar
- 2/3 tsp salt
- 1 tsp dried yeast
- 190 ml warm water
- 20 g unsalted butter
For the chocolate filling
- 1 egg
- 100 g sugar
- 25 g plain flour
- 30 g cacao powder
- 120 g milk
- 10 g butter
How to Make Marble Chocolate Bread
- Make the dough first. Put flour, salt, sugar and yeast in a big bowl, pour over warm water and stir well.
- Slightly knead, then add butter to the dough and knead again. Just keep kneading, until the butter is absorbed by the dough.
- Knead the dough until it is smooth and not sticky. Cover with cling film and let proof until it doubles the size.
- Meanwhile, make the chocolate filling. Beat the egg in a large bowl, add sugar and whisk together.
- Sift cacao powder and flour, then add into the egg mixture, mix well. Cover with a cling film, 600W microwave heat for 2 mins. Take it out, give it a stir, then again microwave for 2 mins.
- Add butter while the mixture is hot. Mix until it’s smooth. Place the chocolate mixture onto a cling film, even the thickness and wrap it like a chocolate bar. Chill in a fridge or freezer until it’s hard.
- Back to the dough. After it has doubled the size, punch it down and shape into a 30 cm square.
- Take out the chilled chocolate filling. Place on the dough diagonally, then fold all sides of the dough towards the centre to wrap the chocolate, like an envelope shape. And seal all the edges.
- Roll the dough into a 20 cm x 40 cm rectangle, try your best to make the dough thickness as even as possible. Then fold towards centre and you should have 3 equal parts.
- Roll again into a 15 cm x 40 cm rectangle.
- Again fold towards centre (3 equal parts) and roll to 30 cm long.
- Both sides fold towards centre, even out the thickness when you can.
- Cut the dough into 3 equal parts, you should see layers of chocolate in between.
- Brush some butter in the mould. Roll up all the dough like you roll the towels and place them into the mould. Let them proof till to the height of the mould. Meanwhile, preheat oven to 190ºC.
- Bake for 30 mins.
Cooking Note
- Next time I’ll add some real chocolate chips, instead of juts cacao powder.
- Try to even the dough thickness as possible as you can, as it will affect directly how does it look.
- If the dough rises too much, beware that the top can get burnt while baking.
- Let the bread cool down after baking, don’t grab it while it’s hot as the shape can be damaged.
