Stir-fry mangetout is crisp and sweet. No doubt it has become our favourite vegetable in the summer time! Simply stir-fry it with some garlic and cumin (I prefer a little turmeric too), don’t over-season, just let the bean itself sing.

How to Pronounce Mangetout?

But first of all, before you learn how to cook mangetout, you better know how to pronounce it! Mangetout is a French word, meaning ‘eat all’. It is pronounced as ‘monzh-too’ . Just add some French accent and you’ll be there!

Simply put, the mangetout(or called snow pea, sugar pea) is in a flat shape with small-sized peas inside the pod. They are not yet grown up! That’s why the outer pod is tender and edible.

When mangetout is fully developed, the body also becomes rounder, like a human, then it’s called snap pea. By that time, their pods can still be eaten.

I usually pluck off the heads and tails, then pull off the strings. When it’s difficult to pluck with your hand, then use a knife and pull the strings. Sometimes there is no string. It’s fine.

Supermarkets often have an option for ready-trimmed mangetout at a more costly price. Pick that one if you really hate trimming.

Ingredients

Serves: 2

  • 130 g mangetout, trimmed
  • 1 clove garlic, minced
  • 1/2 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1/4 tsp salt

How to Make Cumin Stir-fry Mangetout

  1. Heat a tsp of oil in a pan, fry the cumin until fragrant, then add garlic.
  2. When the garlic smells good, throw in the mangetout and stir-fry over medium-high heat for 1 minute.
  3. Season with salt and turmeric, splash 1 or 2 tbsp of water and cover with a lid. After a minute, uncover and keep stir-frying until the water evaporates. Serve hot.
