Speedy Mackerel Spaghetti (Jamie Oliver’s Recipe)
Cook mackerel spaghetti with a can and in 15 mins.

This mackerel spaghetti can be made in 15 mins. The flavour mostly comes from the mackerel tin so it’s a real quick and easy recipe. Next time I’ll stock more fish cans at home.


Watched Jamie Oliver cooking it on TV, seemed really easy and simple to make, so today I’ve given it a try, surprisingly good!

If you also want to try it out, remember to buy a tin of mackerel in tomato sauce next time when you shop. I believe other fish tins will work too, but this little spicy tomato sauce really offers a lot of flavour, love it.

A Couple of Things that I Changed

  • Added salt and garlic powder to the breadcrumbs
  • Omitted cheese and lemon zests
  • Used frozen broccoli instead of fresh

It still worked well, no worry.

Ingredients

Serves: 2

  • 100 g sliced bread
    • pinch of salt
    • 1 tsp garlic powder
  • 150 g spaghetti
  • 200 g frozen broccoli
  • 125 g (a tin) mackerel in tomato sauce
  • 2 cloves garlic, sliced
  • 1 dried chilli, chopped
  • ½ lemon juice
  • 3 tbsp olive oil

How to Make Jamie Oliver Speedy Mackerel Spaghetti

  1. Tear bread into smaller pieces, then blend into crumbs.
  2. Heat 1 tbsp of olive oil in a pan with medium-high heat, toss breadcrumbs for 3-4 mins, or until they are crispy, set aside.
  3. Meanwhile, bring a pot of salted water to boil (approx. 1% salt), add spaghetti and frozen broccoli. Take out the broccoli after 2 mins and cut into smaller pieces.
  4. In step 2 pan, heat the rest of the olive oil with medium-low heat, add chilli and garlic, fry until fragrant but not burnt, then add broccoli and whole can of mackerel (with sauce).
  5. Use a fork or spatula to break the mackerels into smaller pieces, also add approx. 100 g of pasta water, simmer for 2 mins.
  6. Then add the cooked spaghetti, toss well, add more pasta water if required.
  7. Freshly squeeze in lemon juice, top with crunchy breadcrumbs before serving.
