This tomato and basil spaghetti requires very simple ingredients. Give it some time, let the ingredients shine. And a desired and comfort taste is born.

‘Something simple, maybe pasta?’
After eating a few days of ‘restaurant food’, we often felt very heavy and too full. We have no idea why we feel it that way. Perhaps it’s too much oil and fat? Have you ever had similar experience?
Today I don’t want to cook anything complicated. Since our basil are growing too much, and we also have ripe tomatoes on hand, I’ve decided to make a fresh tomato and basil spaghetti.
Slow Cook Tomatoes for 30 mins
I’ve tried cooking many tomato sauce pasta before. I usually use tomato passata or canned tomato. However, sometimes I find the acidity is too strong.
So, this time I use fresh tomatoes. Cook it with low heat for around 30 mins to reduce the water content and enhance the tomato’s flavour. Followed by adding a bunch of fresh basil, such a simple ingredients combination results in a gorgeous taste. Yummy!

Ingredients
Serves 2
- 160 g spaghetti
- 400 g ripe tomatoes, roughly chopped
- 2 cloves garlic, sliced
- 1 red dried chilli, deseeded
- 10 g butter
- 30 g fresh basil, roughly torn
- salt and black pepper
- a pinch of sugar
- extra virgin olive oil
How to Make Slow Cook Fresh Tomato and Basil Spaghetti
- Heat a generous amount of oil in a frying pan, gently fry the garlic and chilli over low heat until golden and fragrant.
- Add tomatoes and a pinch of salt and pepper, stir well and bring it to a simmer, cook for 30 minutes, stir occasionally.
- While the tomatoes are almost done, cook the spaghetti in salted water according to the packet’s instructions.
- Have a taste of the tomato sauce and adjust with salt & pepper. Add a little of sugar if the acidity is too strong for you. Turn off the heat, fold in the butter and basil.
- Stir in the spaghetti and give everything a nice stir. Drizzle in more olive oil if desired. Some grated cheese on top would be nice too.
