What is Potato Hash?
May be you’ve heard of hash brown, but have no idea what is ‘potato hash’?
‘Hash’ is a word derived from French ‘hacker’, means hack or chop. So, if literally translates ‘hash brown'(or ‘hashed brown’) would be fried chopped potato.
If you search on google, you will notice ‘hash’ is a culinary dish. Usually it is consisted of some cooked meat and fried potatoes, some may put an egg on top also.
This recipe is adapted from Jamie Oliver. I followed his recipe using both sweet potato and potato. The colour looks nice, and the sweet potato offers sweetness too.
I only changed 2 things.
First, instead of thyme, I used rosemary which was the only herb I had on hand; Second, I added a bit butter into it to bring out more golden colour and fatty flavour. I find it works well! So feel free to modify to your taste, change to other herbs or so. Potato is a very easy going vegetables. You can’t go wrong with it!
Ingredients
Serves 2
- 180 g sweet potato
- 180 g potato
- 2 tsp oil
- 10 g butter
- 1 small red onion, sliced
- 1 sprig rosemary
- 1 bunch parsley, finely chopped
- salt & pepper to taste
How to Make Sweet Potato Hash
- Cut the potatoes into 2 cm cubes. Boil them in salted water for about 5 minutes, then drain and set aside.
- Heat some oil in a pan and stir-fry the onions until fragrant.
- Add the rosemary and potatoes. Let them cook over medium low heat until started to colour.
- Stir in the butter and continue cooking until they are nicely browned, about 3-5 minutes.
- Have a taste and adjust with salt and pepper. Finally, garnish with parsley.
