Sweet beetroots, clementines, salad greens and crispy walnuts, mixed with orange juice, yogurt and vinaigrette. It’s a sweet and refreshing salad that can be served in 5 mins.

Healthy Salad Ready in 5 mins

Sometimes I’m in lazy mode and want to cook something simple – A pack of ready-cooked frozen fried rice/noodles, plus a simple salad can be my lunch.

The advantage of making this salad is that you only need to use one plate instead of using another small bowl to make the sauce. Basically, put all the ingredients on the plate, put a few tablespoons of Greek yogurt, pour over the red wine vinegar and olive oil, then freshly squeeze in the orange juice and season with a little salt and black pepper. The whole process only takes 5 minutes and you’re off to go!

Ingredients

  • rocket leaves (arugula)
  • 1 cooked beetroot, diced
  • toasted walnuts, chopped
  • 1 sweet and juicy clementine
  • greek yogurt
  • red wine vinegar
  • olive oil
  • salt and pepper

How to Make Beet and Clementine Salad with Greek Yogurt Vinaigrette

  1. Place the rocket leaves, beetroots and ¾ of clementine on a plate. Then freshly squeeze in the remaining clementine juice on the salad.
  2. Add the walnuts, red wine vinegar, olive oil and greek yogurt. Season with a little salt and pepper. Everything mix well and enjoy.
