Cauliflower steak can be easily made in a pan, no oven is required. Just 10 minutes or so. Adapted from a Gordon Ramsay’s recipe.

No Oven, Just a Pan

On the Youtube channel ‘Ramsay in 10’, he cooked a cauliflower steak in 9 minutes. Of course, there are assistants who have prepared the ingredients for him, so he could cook super smoothly. For those who are on their own, fear it not, the cauliflower steak is actually not difficult to make – just cook it in a pan with high heat. I think it is much more practical and faster than oven, and it can save energy!

Use Any Herbs You Have

Gordon used caraway seeds and almond flakes for toasting, while I used cumin seeds instead; He used dill, parsley, mint to make vinaigrette, I used coriander and sage since that’s all I had. Although the herbs profile is different, I was happy with the result, made me mouth-watering!

Oh yes, he did added lemon juice, but I totally forgot that, next time 😉

Ingredients

Serves 2

  • 1 head cauliflower
  • 3-4 cloves garlic
  • 2 bay leaves
  • 10 g butter
  • 50 ml broth
  • salt and pepper
  • almond flakes
  • 1/2 tsp cumin seeds

For the Herb Vinaigrette

  • ½ round shallot
  • 1 tsp French mustard
  • 2 tsp red wine vinegar
  • fresh herbs(parsley, mint, coriander, sage…)
  • 2 tbsp olive oil

How to Make Cauliflower Steak with Herb Vinaigrette

  1. Heat up a pan without oil, add sliced almonds and cumin seeds to roast until fragrant but not burnt. Set aside to cool down. Meanwhile, cut the cauliflower into about 1 ½ cm thick slices.
  2. Heat some oil in another pan, put in the cauliflower steaks and season with salt and pepper. Smash the garlic and add to the pan together with the bay leaves and butter. Pan-sear the cauliflower steak until golden brown, then turn to the other side.
  3. Pour in the broth, cover and let it cooks for about 4-5 minutes until cooked through. (Cauliflower will be too soft if cooked for too long)
  4. While you wait, prepare the herb vinaigrette. Slightly chop the herbs, dice the shallots and mix well with other ingredients.
  5. Serve the cauliflower steak on a plate and drizzle in the herb vinaigrette. Sprinkle in the sliced almonds and cumin seeds before serving.
