Recreated the common side dish – Boiled potato with thyme and spinach. No oven required, just boil the potatoes and cook with butter and thyme.


In the Lisbon trip, the first meal I had was the popular dish, grilled octopus, with a side dish, thyme potato with spinach.

However, it seemed like the chef had mistaken the salt as some magical powder, and oily as far as I put on lip gloss. The whole side dishes was ruined!

When I got home, I was not obsessed with octopus, but craved eating the potatoes and spinach again!

Actually, it’s very easy to make.

Boil the small potatoes in salted water till cooked through, then cook with melted butter and thymes. I used the remaining butter to cook the garlicky spinach as well!

For a delicious and nutritious lunch, I also baked a fish and made a speedy couscous.

Ingredients

Serves 2

  • 6-7 small potatoes
  • 50 g spinach
  • 10 g butter
  • 1 clove garlic, minced
  • salt and pepper
  • few sprigs of thyme

How to Make Boiled Potato with Thyme

  1. Heat a pot of salted water (around 1% salt), boil the potatoes for 13-15mins, or until a fork can pierce through.
  2. Melt the butter in another pan with low heat, add thyme to release the aroma. Then add the potatoes and a pinch of salt and pepper, roll them in the pan to coat with butter and thyme.
  3. In the same pan, fry the garlic until fragrant but not burnt. Stir in the spinach to cook until wilted. Season with a little salt and pepper.
