This miso daikon is similar to the Japanese oden, a stew in dashi broth. Easily cooking in one pot, its hearty flavour can warm you up in a dark and cold winter.
Daikon is not easy to get in a European country. When I could get one, I like to cook it into a Japanese homey one-pot dish called daikon-no-miso-ni (大根の味噌煮, broil daikon with miso).
The method is simple – cook all the ingredients together in a small pot for 15-20 minutes, no oil is required. I added spicy chilli bean sauce (豆板醤) for an extra kick of flavour, but it’s totally fine to opt-out if you prefer a mild version.
This dish is deliciously braised and warms the stomach, so it is a very suitable dish for winter, a bit like oden.
Japanese Miso Daikon Recipe
I love this miso daikon recipe that requires no oil. It’s healthy and super easy to make!
Ingredients
- 300 g daikon
- 2 half-thumb size gingers
- 2 tbsp miso
- 2 tbsp sugar
- 1 tbsp Shaoxing wine
- 1 tsp soy sauce
- 1 tsp toban djan (chilli bean sauce) (optional)
- 300 ml water
How To Make
- Cut the daikon into an inch thick half-moon shapes.
- Make the broth. Boil the water, add the gingers and daikon. Cook for 5 mins.
- Add all the seasonings and bring to a boil again. Then simmer for 15 mins more. Serve hot.
