15-Minute Cheesy Courgette with Toaster

The low-prep work and no-flame cooking brings the cheesy courgette often to my dining table. You’ll absolutely love it if cheese is on your side.


Why I Love this Cheesy Courgette

  1. Courgette has a (relatively) long fridge life. I don’t feel rushing to consume it. Buy one at home, use it anytime I need.
  2. Less prep work and no flame is required. Just cut, season, then roast in TOASTER! How much easier can it be?
  3. Tasty. Seriously. Excellent produce with simple seasoning is the best. Juicy courgette with a coating of crispy golden cheese. Who doesn’t like it?
  4. Free my hands (and hop). Since the courgettes are cooked in a toaster, I can cook other dishes at the same time without occupying the hop.

A Note of Cheese and Toaster

  • Use finely grated cheese. You want the cheese to be coloured in a short time. That’s why finely grated cheese is recommended here. I used grated French Emmental since its distinct and rich flavour is my favourite.
  • Use Mini oven/Toaster for open toast. Convenience and short cooking time are what we’re looking for here. So, forget about preheating a big box of conventional oven for just a few pieces of courgettes. Invest a small amount of money in a mini oven, to grill mackerel like a Japanese, or make banana peanut butter toast, or tomato cheese toast. It’s a good kitchen helper! (perhaps the air-fryer will work too?)

Recipe of Cheesy Courgette with Toaster in 15 Minutes

Absolutely no frills no fuss, flame-less, healthy, tasty and QUICK!

Ingredients

  • ½ courgette
  • salt and pepper
  • neutral oil
  • finely grated cheese (I used Emmental)

How to Make

  1. Preheat the toaster oven to 210ºC. (The toaster oven’s temperature is quite imprecise in my opinion. The goal here is to colour the cheese and cook the courgette. Bear that in mind, adjust the oven’s temperature with your experience and instinct.)
  2. Cut the courgette into 1 ½ cm discs. Place them on a lined tray, season with salt and pepper, then rub both sides with oil.
  3. Sprinkle a small spoonful of cheese on each piece of courgette. Place the tray on the top rack and bake for about 10-12 minutes until the cheese is golden.
